You won't believe how easily this can be achieved. No need to be a Master Chef, anybody can cook a delicious dish at home. And with very little prep too.

How to tenderise the beef

I cooked this dish several times, and with different cuts of beef. I found that the best beef for this stir fry is the BEEF FILLET STEAK that is very tender and cooks in a matter of a minute of so.

If you go for the stewing beef chunks that are meant to be cooked slowly in order to get a tender meat, that won't cook as fast and are not quite the best for a stir fry.

You can, however, make the stewing beef cook faster by tenderising it with a rolling pin, an bashing it well until it's nearly flat. Do make sure the strips are small, so they can cook faster.

Marinating is another great way of tenderising the meat, this not only make the meat a lot more flavourful, since it's soaking all the fantastic flavours, but also more tender.

Another tip is to never overcrowd the pan, cook the beef in batches, to make sure it cooks through, it doesn't need more than 1-2 minutes on a high heat. And there you have, tender beef, just how it should be, cooked to perfection. Your easy beef noodles recipe is pure delish.

Once the meat has rested in the marinade, the rest is so easy and quick. All you have to do is cook the noodles separately according to the package instructions. I love the thinner egg noodles, but you can use anything you like, vermicelli, ramen, soba noodles, etc. They all have a distinct texture and taste, but work well in this dish.

As for the sauce, l don't buy the ready made ones, they are way too sweet. Make the sauce yourself, it's super easy and brings so much flavour. Again, just simple ingredients that are the very foundation of many Chinese dishes: light soy sauce, dark soy sauce, sesame oil, rice vinegar, a tiny little bit of brown sugar and corn flour.

  • heat up the oil, add the marinated beef chunks, and stir fry on high heat for a minute of so until no longer pink
  • remove from the pan and set aside
  • heat up remaining oil, add the ginger, garlic and spring onions, and fry for about 30 seconds or so until fragrant
  • add the broccoli florets, and stir fry until tender
  • toss in the noodles and beef, plus the sauces, and give a good stir
  • garnish with freshly chopped parsley

How easy! Who needs to order a take-away?

Easy swaps

This dish is absolutely delicious. The beef and broccoli stir fry goes wonderfully well with noodles, but also with rice. Make the stir fry the same way, but instead of adding the noodles to the pan, add the cooked rice on a plate and top with the stir fry. Absolutely delicious!

If you happen to have any leftover roast beef from you Sunday roast, follow the same instructions of cooking the broccoli, and once that's ready, add the leftover beef. And you have a fantastic leftover roast beef stir fry.

Alternatively, use any other leftover meat that you have around. As for the veggies, you can add any other leftover vegetables too, or fresh ones like: carrots, peas, green beans, mushrooms, peppers and the list can go on and on. Do give it a go!

Ingredients

For the marinade

  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon cornflour (corn starch)
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar

For the stir fry

  • 1 beef fillet steak (300 g, 10 oz)
  • 1 broccoli head
  • ½ onion
  • 2 cloves of garlic
  • 1 teaspoon ginger puree
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoon vegetable oil
  • 2 nests of egg noodles

Instructions

  • Start by making the marinade. In a bowl, combine one tablespoon of light soy sauce, one tablespoon of dark soy sauce, half a tablespoon of corn flour and half a tablespoon of sesame oil and stir.

  • Use a meat tenderizer to bash the beef strips really well, until almost flat.

  • Add them to the marinade, cover the bowl with kitcken foil and leave to rest for at least an hour.

  • Boil the noodles according to the package instructions. Drain the water, add a splash of sesame oil and toss well. Set aside.

  • Add half of the vegetable oil to the wok and fry the beef strips in batches, about 2 minutes on each side, until cooked through.

  • Remove from the wok and set aside.

  • Add the remaining vegetable oil to the wok, chop the onion, garlic and ginger and fry for about 30 seconds.

  • Break the broccoli into small florets, add to the wok and stir fry for 2 minutes.

  • Combine all the ingredients for the sauce: soy sauces, sesame oil, rice vinegar and sugar, and pour it over the broccoli.

  • In go the beef and noodles, stir well to combine, add the chopped parsley and remove from the heat.

  • Serve immediately.
