What does 7UP do in baking?

You may often notice soda in baking recipes. So why is it in there? If course it adds sweetness and flavor, but 7UP (and other sodas) also help the cakes to be light.

What are the ingredients for a 7UP cake?

7UP cake only has 6 ingredients. You’ll notice that baking soda and baking powder are not in the cake. It’s ok! It’s not missing, it just isn’t needed.

How do you make a 7UP pound cake?

Because this is a thick batter, we recommend using a hand mixer or stand mixer to cream the ingredients together.

  • Start by greasing a 12 cup bundt cake pan with shortening, then dust with flour. Be sure your bundt cake pan is big enough to hold all the batter.
  • Beat the sugar and butter until creamy, scraping the sides of the bowl as needed.
  • Add in lemon extract and mix.
  • Add in eggs and mix well.
  • Add in flour and mix, scraping the sides of the bowl as needed.
  • Add in 7UP® and mix for 1 minute.
  • Scrape down the sides of the bowl, then mix again for 1 minute at low speed.
  • Pour batter into the prepared bundt cake pan.

This cake takes awhile to bake. Bake for about 1 hour and 10 minutes, but it can take up to 1 hour and 20 minutes.Our cake took about 1 hour and 10 minutes to bake.

Frosting for a 7UP Cake

The frosting is easy to whip up with simply a bowl and a whisk. You can use a hand mixer if you’d like, but we find it just isn’t necessary.

  • Combine the powdered sugar, vanilla, lemon juice, and 7UP. Whisk the mixture until it is smooth.
  • After the cake comes out of the oven, let it cool in the pan for about 10 minutes.
  • Turn the cake over onto a cake plate.
  • Let the cake coo, then then drizzle with the glaze.

The glaze gives an amazing citrus flavor to the cake. Don’t skip it! It’s so good!

Can you make a bundt cake in a regular pan?

You can bake a pound cake in a 9×13 baking pan instead of a bundt cake pan. However, the timing will be different. It may take longer to bake this cake in a 9×13 baking pan. If the top starts to get too brown, cover the cake with foil.

How do you store pound cake?

This cake is best stored at room temperature. Keep it in an airtight container for 2-3 days. If you want to keep it longer you can refrigerate the cake after 3 days or freeze it.

This cake freezes really well! Make sure it is wrapped well in plastic wrap, then place in a zippered storage bag or plastic storage container.
